Mildly spiced banana and fresh fenugreek stir fry

Fresh fenugreek is available in abundance in winters.Its a good source of Iron,Vit K, roughage, nicotinic acid and protein so very good to include in your daily diet in different forms.we make different recipes with fresh methi and the most popular is Methi aloo subzi and Methi Thepla

This kela methi nu shaak is a typical Gujarati specialty its quick and easy to make and taste so good .It have all the taste-sweet from banana,bitter from methi,hot from the chilies and sour from lemon juice.
You have to make it just before serving and then it taste best. Best served with with bajra roti and aloo shaak.

INGREDIENTS-

  • Ripe banana -3
  • Fresh fenugreek,chopped /methi- 1.5 cup
  • Green chili,chopped -1.5 tsp 
  • Ginger chopped -1/2 tsp
  • Lemon juice - 2 tsp
  • Sugar - 1 tsp
  • Salt - to taste
  • Turmeric -1/4 tsp
  • Chili powder- 1/2 tsp
  • Garam masala -pinch of
  • Cooking oil - 2.5 tbsp
  • Cumin seeds- 1/2 tsp
  • Asafoetida- pinch of

PROCEDURE-

  1. Pick tender  leaves of methi and wash them well and chop finely.
  2. Peel and slice banana in medium thick roundels and keep aside.
  3. Heat oil in a pan and add cumin and carom seeds.
  4. Then add chopped green chilies and asafoetida and stir till cumin become golden in color.
  5. Now add chopped fenugreek leaves and 3 tbsp of water.
  6. Cover the pan and cook till leaves get cooked.
  7. Now add sugar,salt,chili powder ,garam masala and lemon juice in banana slices
  8. Add turmeric powder in the pan and stir to mix.
  9. Now add banana slices in the pan and stir gently.
  10. Cook for few seconds or for a minute.
  11. Serve hot with bajra or wheat roti.

Moong Daal Pakora / Bhajiya

Crispy fried nuggets made with yellow lentil, fresh fenugreek and potatoes

During winter season we all  like to have hot and crispy snacks .This daal ka bhajiya or Vati daal na Bhajiya is a easy and popular snack in North India.These lentil  fritters are called as vadas in Southern India and in North India they as popular as bhajiya or pakoras. 

Yellow lentil or moong daal is soaked and ground and then few spices ,fresh chopped fenugreek leaves and potatoes are added in it and then small nuggets are dropped in hot oil and fried to make golden crisp pakoras /vadas .

You can also make these pakoras without fenugreek leaves if not available easily,and can also use chilkewali moong daal(split moong daal with skin) instead of yellow moong daal or use half of each daal.

INGREDIENTS-
  • Yellow lentil /moong daal- 3/4 cup
  • Potato,boiled - 2 small
  • Fresh fenugreek/methi , chopped-3/4 cup
  • Green chilies, chopped- 2 tsp
  • Chili powder/Mirch- 1 tsp
  • Salt- to taste
  • Asafoetida /Hing- 1/3 tsp
  • Cumin seeds /Jeera- 3/4 tsp
  • Cooking oil- to deep fry
  • Coriander seeds/Dhaniya, crushed- 1.5 tsp
PROCEDURE-
  1. Wash and soak moong daal for about 3 hours.
  2. Grind daal to make a smooth and thick paste(no need to add extra water)
  3. Peel and chop boiled potato into small pieces (like we chop to add in poha).
  4. Wash and finely chop methi leaves  and coarsely crush coriander seeds in mortar and pastle.
  5. Take ground moong daal paste in a bowl and whisk well.
  6. Now add all the spices and methi leaves and mix well.
  7. Then add chopped potatoes and mix gently.
  8. Heat oil in a deep and wide pan to deep fry.
  9. Drop small portions of lentil mixture in the oil with the help of your fingers or with a small spoon.
  10. Deep fry on medium heat till golden in colour.
  11. Drain on a paper napkin when done.
  12. Serve hot.
Serving suggestions-serve hot with green chutney,tamarind chutney or ketchup.

How to make vada pav /Vada pav recipe

 An Indian version of burger - very popular street food of Mumbai

Vada pav is the popular street food of Maharashtra. As it is very reasonable priced and a quite filling snack so is is also a brunch or lunch of many Mumbaikars. It is quite easy to make and you will also get all the ingredients easily at home.

A spiced potato dumpling is dipped in gram flour batter and deep fried to a nice golden colour and then served hot with spicy green chutney and a fried green chili.Its quite easy and quick recipe.You can easily adjust the spices according to your taste.

There are few variation of making the batata vada but the main ingredients and spices remains the same.You can adjust the spices according to your taste.

INGREDIENTS
  • 6  - Pav buns (recipe here )
  • 6 - Batata Vada (recipe here )
  • 4 tbsp - Green chutney (recipe here )
  • 4 tbsp - Tamarind chutney (recipe here )
  • 4 tbsp - Dry coconut chutney (Recipe here )
  • 6  - Green chilies
  • 1 tsp - Chat masala
Cooking Directions
  1. Take a pav bun and slit it from the center but keep attach from the end.
  2. Poke the whole green chili and deep fry or shallow fry in hot oil
  3. Remove chili from the Pan and sprinkle some salt or chat masala and keep aside.
  4. Apply some green chutney on the inner side of the pav.
  5. Apply tamarind chutney on the second half of the bun.
  6. Slightly press the vada pav and stuff in between the pav.
  7. Sprinkle dry coconut chutney over the vada pav.
  8. Close the bun and serve with fried green chili.

Green Apple Chutney

Tangy and spicy apple chutney

Indian food is incomplete without pickles and chutneys. their are variety of chutneys can be made with fresh herbs,fruits and vegetables,some are consumed fresh and some we can make in big batches and store for a long time .
Apple is used to make many Indian preserveS .Apple ka murabba ,sauce and chutnyes are relished the whole year.I love making fruit chutney and I have already posted a few-

Green apple chutney


INGREDIENTS-
  • 725 gms / 4 - Green apples
  • 3/4 cup - Sugar
  • 2 tbsp - Apple cidar vinegar
  • 1 tbsp - Grated ginger /adrak
  • 1.5 tbsp - Raisins /kishmish
  • 2 tbsp - Cooking oil /tel
  • 1 tsp - Cumin/jeera
  • 1/2 inch - Cinnamon stick /daalchini
  • 4 - Green cardamom/elaichi
  • 2 - Cloves /laung
  • 1/2 tsp - Turmeric/haldi
  • To taste - Salt /namak
Cooking Directions
  1. Peel apples and chop into medium size pieces.
  2. Heat oil in a heavy bottom pan.
  3. Add cumin,cinnamon,cardamom and cloves.
  4. Add chopped apples,turmeric,salt and 2 tbsp of water.
  5. Mix,cover and cook on low heat.
  6. When apple become soft add grated ginger, raisins,sugar and chili flakes.
  7. Mix gently(no need to mash apples ).
  8. Simmer till it thickens slightly,add vinegar and give it a boil.
  9. Cool and store in a glass bottle.
  10. Keep refrigerated after a week.
Serving suggestions-serve with any snack,meal or use as a sandwich spread

Cheesy Vegetable Puffs / Pizza Puffs

Now a days Puff pastry sheets are very easily available and are so versatile that you can use them in so many ways.The most popular stuffed puff pastries can be made in both-sweet and savory versions.we can experiment with so many fillings and flavours to suit our taste.

My daughter likes pizza very much so we tried to create the same flavour in puffs, we make the stuffing with pizza topping ingredients and spices and it turn so wonderful,but you can add any vegetable of your choice, but the mixture should not be very loose else the puffs will not seal properly.

INGREDIENTS-
  • Puff pastry sheets - 7
  • Thick Tomato puree-1/2 cup
  • Tomato,chopped-1
  • Tomato ketchup -1.5 tsp
  • Black olives, sliced - 2 tbsp
  • Corn kernels, boiled - 2.5 tbsp
  • Capsicum, chopped- 3.5 tbsp
  • Mushroom, chopped - 1.5 tbsp
  • Jalapeno,chopped - 1 tsp
  • Mozzarella cheese,grated- 2.5 tbsp
  • Olive oil -2 tsp
  • Chili flakes - 1 tsp
  • Chili powder- 1/2 tsp
  • Oregano - 1 tsp
  • Dried basil - 1/2 tsp
  • sugar- 1 tsp
  • Salt-to taste
PROCEDURE-
  1. Take out the pastry sheets(store brought) from the refrigerator and thaw them for about 20 minutes on room temperature.
  2. Heat oil in a pan and add tomato, tomato puree and chili flakes.
  3. Saute for 2 minute,then add all the spices and vegetables and cook for 2-3 minute or till it become thick.
  4. Now add ketchup in it and take out in a bowl and let it come to room temperature.
  5. Now add grated cheese and mix well.
  6. Take a puff pastry sheet and put some mixture in the center of it.
  7. Fold the sheet into half to cover the mixture.
  8. Press the sides of the sheet with a fork to seal it from all the sides.
  9. Preheat the oven at 200 c temperature.
  10. Now put the stuffed puffs in the oven.
  11. Bake for about 20 minutes or till they become golden from the top.
  12. Cut and serve hot.

Amla Mirch ki Achari Subzi

Healthy stir fry made with Indian gooseberry and green chilies

Amla /Indian Gooseberry is green in colour and have slightly bitter sour in taste.Amla  is a power house of goodness. a great source of vitamin C,very good for skin and hairs. A very rich source of antioxidants and fibre, good for diabetic and heart patients and help in reducing body weight and many more health benefits, so it is a good idea to use amla daily in our diet.

In Indian cooking Amla is used usually to make murabba,pickles and candy,but we can also make delicious subzi which is healthy and consume less oil. Today I am sharing my favourite recipe of making Amla mirch ki achari subzi,hope you all will enjoy it.

INGREDIENTS-
  • Indian gooseberry /Amla -350 gms
  • Green chilies /Hari Mirch - 100 gm
  • Mustard oil /sarso ka tel - 2tbsp
  • Turmeric powder/Haldi - 3/4 tsp
  • Chili powder/Lal mirch -3/4 tsp
  • Pickle masala /Achar ka masala -2 tsp (optional)
  • Coriander powder/Dhaniya- 1tsp
  • Sugar/Chini- 1tsp
  • Salt/namak-to taste
Tempering /Waghar
  • Mustard oil- 2 tbsp
  • Cumin seeds/Jeera-1 tsp
  • Fenugreek seeds/methi dana- 1tsp
  • Fennel seeds/saunf- 1 tsp
  • Asafoetida /Hing - 1/4 tsp
PROCEDURE-
  1. Wash amla and put in the pressure cooker with a glass of water.
  2. Pressure cook for 1 whistle on medium heat.
  3. When cooker cool down completely then open it and drain amla from the water.
  4. Gently press the boiled amla to seperate the wedges or use a knife to seperate them and remove the seed.
  5. Wash green chilies and trim the stem and chop to make big slices .
  6. Heat oil in a pan and add the tempering ingredients.
  7. When seeds start crackling add the chopped green chilies and saute for few seconds.
  8. Now add turmeric,amla pieces and all the spices and mix and stir well.
  9. Cover the pan and simmer for 5 minutes(or till amla get cooked completely)
  10. Open the lid, add sugar and stir fry for a minute.
  11. Serve with rice,roti or any bread of your choice OR use as an instant pickle.
Note-
1-Use mild variety of green chilies to make it.
2-Can use any cooking oil of your choice.
3-If readymade pickle masala is not available then either use masala from your mango or chili pickle jar or just skip it,will  taste great both ways.

Dry Coconut Chutney - for Vada Pav

A savoury dry masala powder made with peanut and spices

Vada pav is a popular street food of Maharashtra.It is Known as an Indianized burgar.A spicy fried potato dumpling is stuffed between a pav and few chutneys are applied on the bun slices and then a generous amount of dry coconut powder is sprinkled over the dumpling.

This dry coconut chutney is ground coarse so it gives a nice crunch and spice to the vada pav. Sesame seeds, peanuts and coconut is used to make this chutney.You can also use normal chili powder but kashmiri chili powder gives a nice and bright red colour so prefer to use kashmiri chili powder and if you are using normal chili powder then reduce the quantity of chilies according to your taste.

Don't grind it very fine otherwise peanut and sesame release their natural oil and it will become sticky.I have added boondi at last stage of grinding to add some crispness to the chutney but this is optional you can skip adding it.

INGREDIENTS-
  • 1/3 cup - Peanuts / moongphali
  • 1/4 cup - Sesame seeds / til
  • 1/2 cup - Desiccated coconut /sookha nariyal
  • 2 tbsp - Kashmiri mirch powder
  • 1 tsp - Cumin /jeera
  • to taste - Salt /namak
  • 1/4 tsp - Citric acid /tatri
  • 2 tbsp - Boondi (optional)
PROCEDURE-
  1. In  a heavy bottom pan add sesame seeds and dry roast till they start crackling.
  2. Remove from the pan and keep aside.
  3. Heat 1tsp of oil in the pan and add peanuts and roast on low heat.
  4. When they start changing the color then remove them from the pan.
  5. Now add desiccated coconut and cumin in the pan and slightly roast (no need to change the color )
  6. Add the toasted sesame seeds in the mixer and crush coarsely.
  7. Now add all the fried ingredients,citric acid and spices in the mixer and crush to make a coarse powder.
  8. Add fried boondi and churn again.
  9. Store in a air tight bottle.

Red Coconut Chutney

A hot and tangy dip of roasted lentil,coconut and red chilies

In south Indian cuisine chutney and podi are very important part of the meal .Different types of chutnies are made to serve with snacks like idli ,dosa and vadas.The most popular chutney from south India is undoubtedly coconut chutney and tomato chutney.
This red coconut chutney is also very popular to serve with idli and vadas.you can adjust the quantity of red chilies according to your taste.
Chana daal is roasted in little oil and then whole red chilies and coconut is roasted to release the aroma and tamarind is added before grinding to add tanginess. Then a flavorful tempering of mustard.curry leaves and lentils is added to give a wonderful aroma.

INGREDIENTS-
  • Bengal gram/chana daal- 3 tbsp
  • Fresh coconut,grated - 1 cup
  • Dried whole red chilies -12
  • Dry tamarind - small lemon sized
  • Salt - to taste
  • Cooking oil -2  tbsp
  • Mustard seeds -1 tsp
  • Curry leaves -10
  • White lentil /urad daal - 1 tsp
PROCEDURE-
  1. Heat oil in a heavy pan.
  2. Add chana daal and roast on low flame till it beacome red in colour.
  3. Add red chilies and saute till it change its colour.
  4. Add coconut and tamarind and remove the pan from the flame..
  5. Stir fry for few seconds.
  6. Let it cool down completely.
  7. Add the ingredients in a mixer jar .
  8. Add some water and salt and grind to make a smooth paste.
  9. Take out the chutney in a bowl
  10. Heat 1.5 tsp of oil in a small pan and add urad daal and mustard seeds
  11. When seeds start crackling add asafoetida and curry leaves.
  12. Now add the tempering in the chutney and mix well
  13. Stay fresh for 2 days at room temperature then keep refrigerated
Serving suggestions- serve with idli, dosa, vada, paniyaram, rice or any snack of your choice

How to Make Batata Vada , Mumbai Batata Vada Recipe

Batata vada is the most popular street food of Maharashtra,It is a very popular snack of Mumbai. As it is very reasonable priced and a quite filling snack so is is also a brunch or lunch of many Mumbaikars.
Boiled potatoes are roughly mashed and then few fresh herbs and spices are added in the potato mash ,then a flavorful tempering is added in it and then shaped in round balls .Then these spicy potato dumplings are dipped in gram flour batter and deep fried to a nice golden colour and then served hot with spicy green chutney and a fried green chili.Its quite easy and quick recipe.You can easily adjust the spices according to your taste.
There are few variation of making this vada but the main ingredients and spices remains the same.

Batata Vada


INGREDIENTS-
  • 250 gm - Potato,boiled
  • 1 tbsp - Green chili,minced
  • 1 tsp - Ginger,chopped
  • 1/2 cup - Fresh coriander,chopped
  • To taste - Salt/namak
  • 1/3 tsp - Turmeric
  • 1/4 tsp - Citric acid/tatri *
  • 1 tsp - Mustard seeds /rai
  • 1/4 tsp -white lentil /urad daal
  • 1/4 tsp - Asafoetida /hing
  • 8 -  Curry leaves
  • 1 tbsp - Cooking oil
Batter-
  • 1 cup - Gram flour /besan
  • 2 tbsp - Rice flour/chawal ka atta
  • 1/4 tsp - Turmeric/haldi
  • 1 tsp - Chili powder
  • 1 tbsp - Hot oil
  • To taste  - Salt
  • Pinch of  - Soda-bi-carb (optional)
Cooking Directions-
  1. Peel and coarsely mash the boiled potatoes(don't make a paste of potatoes )
  2. Heat oil in a pan and add urad daal and mustard seeds.
  3. When seed start crackling add asafoetida,curry leaves and green chilies.
  4. Stir and then add turmeric powder and boiled potatoes.
  5. Add salt and citric acid and stir to mix every thing.
  6. Remove from the flame and add chopped fresh coriander.
  7. Mix it and let it cool down a bit.
  8. Now make small balls from this potato mixture and keep aside.
  9. In a bowl add gram flour, rice flour, salt,chili powder and turmeric.
  10. Add water to make a batter of pouring consistency.
  11. Add hot oil and mix well.
  12. Heat oil in a deep and wide pan.
  13. Dip the prepared potato balls in the gram flour batter.
  14. Gently add in the hot oil and deep fry on medium heat.
  15. Change the sides 2-3 times in between so get a nice colour from all the sides.
  16. Remove from the pan when become golden and crisp.
  17. Drain on a paper napkin to absorb the extra oil.
  18. Slit or poke hole in few green chilies and deep fry them.
  19. Drain on a paper napkin and sprinkle some chat masala or salt over them.
  20. Serve hot vadas with green chutney,ketchup and fried green chilies.
NOTE-
1-To add sourness in the vada you can add either citric acid or lemon juice.
2-Don't mash the potato completely,just mash roughly,don't make a paste of potatoes.
3-You can reduce the quantity of minced green chilies and add some red chili powder in the potato mixture.
4-for variation -you can also add some boiled peas at step -3

Aloo Chiwda / Vrat ki Falahari Namkeen

Fried potato sticks,peanuts and cashews tossed Indian style

During Navratri and other fasting days we need some snacks or munchies along with the main course meals.As there are only few option to use during fasting ,so often we have to try something mainly with potato,banana and yam.This aloo chiwda can be easily used during fasting.
Potato is grated and fried and then fried peanuts,cashews,green chilies and few spices which are acceptable in fasting are added .You can also make this with sundried potato sticks if you want to make it quick and easy.but the taste and texture will be slightly different.

Yield-approx. 5 cups

INGREDIENTS-
  • Potatoes /aloo - 4 medium(500 gms)
  • Peanuts/moongphali - 3/4 cup
  • Cashew nut/kaju,halves- 3/4 cup
  • Raisins /kishmish - 2 tbsp
  • Green chili/hari mirch ,chopped- 2 tsp
  • Curry leaves/kadi patta - 10
Spice mix-
  • Castor sugar/pisi hui chini-1.5 tsp
  • Tatri/citric acid,powdered -1/4 tsp *
  • Pepper powder/kali mirch - 1 tsp
  • Rock salt/sendha namak-to taste
PROCEDURE-
  1. Peel potato and then grate it with a thick grater .
  2. Wash the grated potato with enough water and then squeeze well.
  3. Now spread it on a kitchen towel for 20 minutes.
  4. Take a small bowl and mix all the spices and keep aside.
  5. Heat oil in a deep and wide pan.
  6. Add the grated potatoes in the pan and fry on high flame for 2 minutes.
  7. Then lower the flame and fry till they become golden and crisp.
  8. Drain the fried potatoes on a paper napkin.
  9. Repeat the process and fry potatoes in batches.
  10. Then fry peanuts on low heat till they become golden and crisp,drain on a paper napkin.
  11. Fry cashews on low heat till golden and then drain
  12. Add chopped green chilies in the hot oil and fry,after few seconds add chopped curry leaves .
  13. When curry leaves become crisp, add raisins.
  14. When raisin floats on top of the oil then take out and drain on a paper napkin.
  15. Now sprinkle the spices over all fried ingredients and mix well.
  16. Let the chiwda cool down completely then serve or store.
Note-
1-Citric acid can be substituted with mango powder,or you can skip both.
2-Instead of making with freshly grated potatoes,you can also make this potato chiwda with readymade sun dried potato sticks/sev .But the taste and texture will be different

    How To Make Lemon Rice

    Simple and flavourful peanut and lemon rice -a South Indian specialty

    Rice is the staple diet of South India and there are so many ways of making simple but flavourful rice pilaf .Many South Indian rice preparations are very quick and made by using left over rice.I love rice and often try different recipes to make quick and filling rice preparations.

    lemon rice is a very popular south Indian preparation .It is very flavourful and can be made with either left over boiled rice or  fresh boiled rice. Its a dry preparation so a good recipe to use for lunch boxes and as a travel food.It is also offered as prashad in many south Indian temples.
    If you have left over rice then it can be made in a jiffy,just a tempering of urad daal, mustard, peanuts and curry leaves are added in boiled rice and then lemon juice is added to give that tangy flavour. Addition of cashew nuts is optional.

    This rice is a complete meal in itself so you don't need any accompaniment to serve with it but papad,salad and coconut chutney goes very well with this preparation .

    • Cooking oil - 2 tbsp
    • Mustard seeds/rai - 1.5 tsp
    • Asafoetida/hing - 1/4 tsp
    • White lentil /urad daal - 1 tsp
    • Bengal gram /chana dal - 1tbsp
    • Whole red chili /sadut laal mirch - 4
    • Cashew nuts /kaju - 12
    • Turmeric /haldi-1/2 tsp
    • Salt/namak- to taste
    PROCEDURE-
    1. Heat oil in a heavy and broad bottom pan.
    2. Add peanuts and stir fry on low flame till golden in colour
    3. Drain and keep aside.
    4. Now add urad daal,chana daal and when it start's to get some colour add the cashew nuts and stir
    5. When cashew start's getting a nice color then add whole red chilies,green chilies ,curry leaves and asafoetida.
    6. Add turmeric,fried peanuts,boiled rice and salt and stir to mix well.
    7. Switch off the flame and then add lemon juice and mix.
    8. Keep it covered for about 10-15 minutes so it absorbs all the flavours and the urad daal and chana daal will also become slightly soft.
    Serving suggestions-Serve with salad, papad,coconut chutney or tomato chutney

    Eggless Blueberry Muffins

    Eggless Blueberry Muffins-Soft and moist eggless muffins

    Summers are the best time to get fresh and delicious blueberries. I love their flavour in cakes and muffins so when I find a bag of fresh blueberries in my local store, the first thing that came to my mind was to make muffins. After going through a few different recipes on the net, I made these muffins and  loved the caramelized berries in the soft and moist muffins. You can adjust the quantity of blueberries between 1/2 a cup to 1 cup depending on how much you like them.


    I love making muffins and cup cakes and already posted Orange cup cakes and beautiful and delicious Strawberry cup cakes recipes. But these blue berry muffins are now my new favorites.

    INGREDIENTS-
    • Refined flour / Maida - 1cup +2 tbsp
    • Fresh blueberries - 3/4 cup
    • Corn flour - 3 tbsp
    • Yogurt / Dahi - 1 cup
    • Cooking oil - 1/2 cup
    • Castor sugar / Pisi hui chini - 3/4 cup
    • Vanilla essence - 1 tsp
    • Lemon Zest / Kasa hua nimbu ka chilka - 1 tsp
    • Baking Powder - 1 tsp
    • Baking Soda - 1/2 tsp
    PROCEDURE- 

    1. Sieve flour in a big bowl.
    2. Wash and wipe the  blueberries and dust(sprinkle) them with 1 tbsp of flour.
    3. In a separate bowl add yogurt, castor sugar and mix well.
    4. Now add baking soda and baking powder in the yogurt and mix.
    5. Let the yogurt mixture rest for 3-4 minutes or till it froth.
    6. Now add oil ,vanilla essence and lemon zest in the yogurt mixture and mix gently .
    7. Now add the sieved  flour in the yogurt mix .(keep adding 1 tbsp flour at a time and keep mixing)
    8. Now add the blue berries in the flour mix and stir gently.
    9. Fill the prepared mixture in muffin cups till 3/4 level(don't fill it till the top ,as it need some space to rise while baking) 
    10. Bake in a  preheated oven at 170 c for 35 minutes or till a tooth pick inserted come out clean.
    11. Let it rest for 5 minutes in the oven.
    12. Remove from the muffin cups and serve.

    Ghughni / Matar Chaat / Dried Peas Potage

    An easy to make and popular spicy snack made of dried peas

    Ghughni is a chaat/street food from Eastern India, and is a very popular Bengali snack and is also quite popular in Uttar Pradesh and Bihar.


    During my childhood days street food hawkers carrying hot and spicy ghughni in a big brass pateela were a common sight outside schools, on the road sides, near cinemas halls or just by the roadside.

    Ghughni is made with dried yellow peas/dried green peas. Peas are soaked, boiled, tempered , cooked with tomatoes and spices and then garnished with radish, tomatoes and green chilies. A spoonful of hot green chutney and little bit of tamarind chutney is added  to make it more tangy and spicy.

    It can be served as a chaat, snack or can be enjoyed with hot kulchas, parathas or pooris. Ghughni is also used as a stuffing for pani puri, instead of the usual boiled potato and chickpeas, in eastern Uttar Pradesh.

    The consistency of ghughni depends on your personal choice - some prefer it very thick, some make it with a little bit of gravy the way I made it, but it tastes great either way!

    INGREDIENTS-
    • Dried Yellow peas /matra - 1 cup
    • Tomatoes/tamatar, chopped - 1 (125 gms)
    • Boiled potato/aloo -  1(optional)
    • Green chilies/ hari mirch, chopped -1 tsp
    • Ginger/adrak, grated -1 tsp
    • Turmeric powder/haldi  - 3/4 tsp
    • Chili powder/lal mirch - 1tsp
    • Garam masala - 1/2 tsp
    • Tamarind pulp/imli  - 4 tsp
    • Salt/namak  - to taste
    • Black salt /kala namak- 1/4 tsp
    • Sugar/chini - 1/2 tsp
    Tempering-
    • Cooking oil/tel - 2.5 tbsp
    • Cumin seeds/jeera -1 tsp
    • Bay leaves/tej patta - 2
    • Cinnamon/daalchini - 1/3 inch
    To Garnish
    • Radish/Mooli, grated - 1/2 cup
    • Tomatoes/tamatar, chopped - 3/4 cup
    • Green chilies/hari mirch, chopped - 2 tsp
    • Fresh coriander/dhaniya chopped - 2 tbsp
    • Lemon juice/nimbu ras - 2 tsp
    • Mint chutney /pudina chutney- 4 tsp
    • Tamarind chutney/imli chutney - 3 tsp
    • Roasted cumin powder /bhuna jeera- 1tsp
    • Chili powder/lal mirch - 1tsp
    PROCEDURE-
    1. Wash the peas and soak them in enough water for 6-8 hours .
    2. Then take the soaked peas along with 2 cups of water and pressure cook till they become soft but not mushy (approx for 3-4 whistles,but depends on the quality of peas).
    3. Heat oil in a pan and add cubed potatoes and shallow fry till they become crisp and red. Drain and keep aside.
    4. In the same pan add cumin seeds, bay leaves and cinnamon.
    5. When the cumin turns golden, add the chopped tomatoes, green chilies and ginger.
    6. Saute till the tomatoes become soft, then add the chili powder, turmeric, salt and black salt and saute for a minute.
    7. Now add the boiled peas along with the water and tamarind pulp (can add some more water if needed).
    8. Cover and simmer for 5-6 minutes till done.
    9. Now add the garam masala and mix well .
    How to serve-
    1. Take around 3/4 to 1 cup of ghughni in a serving bowl.
    2. Add some green chutney and tamarind chutney and mix.
    3. Add boiled and fried potatoes (I have not added them).
    4. Now garnish with chopped tomatoes, green chilies, radish and fresh coriander.
    5. Sprinkle lemon juice, roasted cumin powder, black salt and chili powder. 
    6. Serve immediately.

    Quick version-
    1. Boil soaked peas with salt and turmeric till done. Let it cool down a bit.
    2. Take the boiled peas in a bowl and add all the garnishing ingredients(listed in to garnish) and serve.

      Moong Sprout Kachori

      Crisp home made pastry shells stuffed with mildly spiced bean sprout filling

      Kachoris are very popular breakfast and snack from North India.They are flaky and crisp shells made with refined flour, stuffed with either savory or sweet stuffing but savory version is the most popular version of kachoris.

      They are often made on festivals,on every special occasion or can be made any day when ever you want to have some thing crisp and spicy. Kachories are easily available in all restaurants ,chat corners and on road side stalls.They are served with chutney, kadi or allo ki subzi depending on each city and region. In Rajasthan kachoris are served with kadi and in Uttar pradesh kachoris are served with sweet and sour kaddu ki subzi. and thin potato curry

      They are usually made with refined flour/maida but can also be made with wheat flour or a mix of wheat flour and refined flour or even with multigrain flour. Stir fried spicy lentil or vegetable mixture is made to stuff inside the kachori and then the stuffed kachoris are deep fried on medium heat till golden and crisp.

      INGREDIENTS-

      For outer layer/puff
      • Refined flour /maida- 2 cup
      • Semolina /sooji - 3 tbsp
      • Cooking oil- 4 tbsp
      • Lemon juice- 1/4 tsp
      • Salt /namak - to taste
      For the stuffing-
      • Bean sprouts /ankurit moong - 3 cup
      • Potato /aloo, boiled - 1(medium)
      • Mint leaves /pudina, chopped - 2 tbsp
      • Fresh coriander,chopped- 2 tbsp
      • Green chili /hari mirch, chopped - 1 tbsp
      • Turmeric /haldi - 1/3 tsp
      • Ginger /adrak, grated - 1tsp
      • Mango powder/amchoor - 1.5 tsp
      • Chili powder/lal mirch - 1.5 tsp
      • Coriander powder /dhaniya - 1.5 tsp
      • Garm masala - 1/4 tsp
      • Salt /namak -to taste
      • Cooking oil /tel - 2.5 tbsp
      • Cumin /jeera - 1 tsp
      • Asafoetida /hing - 1/4 tsp
      PROCEDURE-
      For the outer covering
      1. Mix and sift flour,sooji and salt in a bowl
      2. Add oil and lemon juice and rub to mix well
      3. Add water and make a soft dough.
      4. Cover and keep aside for 20 minute
      For the filling-
      1. Wash bean sprouts very well with normal water.
      2. Heat oil in a heavy bottom pan.
      3. Add cumin,chopped green chili and asafoetida
      4. When cumin start crackling add bean sprouts and saute for a minute
      5. Now add turmric and salt and 1 tsp of water
      6. Cover and cook on low flame till it get cooked but remain crunchy,don't over cook them.
      7. Now add mashed potato and all the spices .
      8. Stir fry for a minute.
      9. Take out in a bowl and let it cool down completely.
      10. Now add chopped mint and coriander and mix .
      Making the kachori-
      1. Knead the prepared dough to make it soft and pliable.
      2. Make small size balls of equal size from the dough and keep aside.
      3. Cover the balls with a damp cloth .
      4. Take a ball and flatten it a little with the rolling pin.
      5. Put about 1.5 tbsp of filling in the center.
      6. Bring together all the sides and collect in the middle .
      7. Close it and press it slightly,make sure it will seal properly.
      8. Press the kachori with your palm to flatten it slightly.
      9. Heat enough oil in a deep pan.
      10. When it become medium hot then gently slide few kachoris in hot oil.
      11. Now lower the temperature to medium.
      12. The kachori will puff up then turn the side.
      13. Fry it till it become golden from both the sides.
      14. Drain the fried kachori on a paper napkin.
      15. Serve hot .
      Serving suggestions-Serve with green chutney and date and tamarind chutney.

        How To Make Masala Dosa

        Crispy rice and lentil crepes stuffed with a mildly spiced potato mixture. A South Indian classic.

        If you ask me about my favorite snack or tiffin then I will take only one name - Masala dosa!! Though there are so many popular snacks and tiffin variety from Southern India but the crisp and spicy Masala dosa tops the list ,undoubtedly the most popular snack from South Indian Cuisine.Now it is not limited in India but is popular world wide.

        Their are many snacks from South India which are healthy,easy to prepare and taste wonderful. From this same dosa batter we can also make Idlis which are steamed and are very healthy.The crisp and potato masala stuffed dosas are hot favorite of people of all age groups. Dosas are crisp pan cakes made by a fermented rice and lentil batter.A mix of regular rice and par boiled rice, white lentil /urad daal and little fenugreek seeds are used to make the batter.

         For making dosa you have to do some pre- preparation.The rice and lentil are soaked separately then both are ground to make a smooth paste and then left to ferment for minimum 5- 8 hours, the fermentation time totally depends on the heat of the climate.Then a stuffing is made with boiled potato,tomato,green chili and few spices .Poha /beaten rice,chana daal and tuvar daal is also added to add crispness and to give a nice golden colour to dosa,but this is optional you can add or just skip this.

        Dosa is usally served with few accompaniments- Sambhar ,  Mysore rasam , tomato chutney and coconut chutney.

        INGREDIENTS-

        • Normal Raw rice /chawal  - 2 cups *
        • Parboiled rice /ukda chawal - 1cup
        • White lentil /urad daal - 3/4 cup
        • Bengal gram /chana daal - 3 tbsp
        • Pigeon pea / tuvar dal - 3 tbsp
        • Beaten rice / poha - 1/4 cup
        • Fenugreek seeds /methi dana - 1/2 tsp
        • Salt /namak - to taste
        For potato masala-
        • Boiled potatoes /aloo - 4 (300 gms)
        • Tomato/tamatar ,chopped - 1/2 cup
        • Green chilies /hari mirch, chopped - 1.5 tsp
        • Ginger /adrak, chopped - 1 tsp
        • Turmeric powder /haldi - 1/2 tsp
        • Chili powder /lal mirch- 1 tsp
        • Lemon juice /nimbu ka ras - 2 tsp
        • Fresh coriander /hara dhaniya- 2 tbsp
        • Salt /namak - to taste
        Tempering-
        • Cooking oil /tel - 4  tbsp
        • Mustard seeds /rai - 3/4 tsp
        • Cumin seeds /jeera - 1/4 tsp
        • White lentil /urad daal - 1tsp
        • Bengal gram /chana daal - 1 tsp
        • Asafoetida /hing - 1/4 tsp
        • Curry leaves /kadi patta -8

        PROCEDURE-

        To make the dosa batter-

        1. Wash rice and dal and then soak both rice together and all the lentil and fenugreek seeds in a separate container for about 5-7 hours.
        2. Then reserve some water in which you have soaked urad daal as we will use this while grinding it.
        3. Drain the remaining water and wash the soaked dal and rice with clean tap water.
        4. Now grind the soaked daal with some water and make a smooth and fluffy paste of pouring consistency.
        5. Remove the ground daal paste into a big container.
        6. Now add soaked rice in the mixer jaar, add some water and grind to make a smooth paste.
        7. Add the ground rice paste in the same container.
        8. Add salt and mix it well.
        9. Cover the container with a loose lid and keep it in a warm and dark place.
        10. The batter will take about 8-12 hours to ferment and in winters it may take some more time.
        11. When it become almost double and you see bubbles on the surface then its ready to use.
        To make the stuffing-
        1. Peel the boiled potatoes and mash them into small pieces.
        2. Heat oil in a pan and add the urad daal,chana daal,mustard and cumin seeds.
        3. When cumin start to crackle then add curry leaves asafoetida and chopped green chilies.
        4. Stir fry for few seconds.
        5. Now add chopped tomato and salt and stir.
        6. When tomato become little soft then add turmeric and mashed potatoes.
        7. Add all the spices, 1.5 tbsp of water and saute to mix all.
        8. Add chopped coriander and lemon juice and mix.
        9. Remove in a bowl and keep aside.
        How to make dosa-
        1. Take the  fermented batter in a bowl and mix well.
        2. Add some water if the batter is too thick,as it should be of pouring consistency.
        3. Take a non stick or heavy iron griddle /pan.
        4. Apply few drops of oil over the pan and wipe with a moist cloth or paper napkin.
        5. Pour a laddle ful of batter on the medium hot griddle and spread it on the tawa in a thin round circle.
        6. Let it cook for few seconds till it change its colour and become light golden in colour.
        7. Spread a tsp of oil around the dosa and 1 tsp over the dosa.
        8. Flip the dosa and cook from other side for  few seconds.(this step is optional)
        9. Flip it again and put about 3-4 tbsp of potato masala in the center and fold it from both the sides.
        10. Serve hot with coconut chutney, sambhar and malaga podi
        MY NOTES AND TIPS-
        1. You can also add boiled green peas and broken cashew pieces in potato masala at step-3.
        2. Instead of using oil you can use ghee or butter  to roast the dosa, it will enhance the taste.
        3. Use a big container to keep the batter as it will increase twice or thrice in volume after fermentation and may spill over from a small container.
        4. The batter should not be very thick or thin ,it should be of pouring consistency ,the crispiness also depends on the right consistency of the batter.
        5. Normal raw rice - use the rice which you use on daily basis,it need not be basmati rice, any short grain, medium grain or broken rice can be used and if you don't have par boiled rice then can use normal rice only.
        6. The left over batter can be easily stored in the refrigerator for 3-4 days .
        7. The fermentation time depends on the heat in the climate ,it will ferment sooner in summers but in winters it may take quite some time to ferment .
        8. Chana daal and tuvar daal gives a nice golden colour to the dosa.
        9. Addition of poha makes the dosa crisper but this is optional.
        10. I prefer to use a heavy iron skillet /tawa to make dosa but you can also use hard anodized skillet or a non stick pan to make dosa, all works well , but grease the iron skillet/tawa well before using.
        11. Keep sprinkling few drops of water on the tawa or wipe the griddle with a damp cloth after making each dosa to bring down the temperature else the dosa will stick to the pan and become difficult to spread properly .

        Idli Miligai podi /Malga podi

        Flavorful and delicious spice powder made with roasted lentil and spices

        Milagai podi or malgapodi is a popular powder/chutney/podi of every south Indian kitchen.It is a nice accompaniment to serve with dosa ,idli,adai and vada. When ever I go to any south Indian restaurant  I love the malgapodi more then the chutnies served with idli and dosas.

        When I met a south Indian friend of mine she shared her family recipe with me.Though there are many recipes to make malga podi and every family has their own traditional family recipe but the main ingredients remains the same, just different ratios of ingredients or few more or less ingredients to be added . Addition of tamarind and jaagary is optional ,you can add or skip both.

        Traditionally Malga podi is served mixed with little sesame oil but you can use ghee or have plain like I do. Idlis smeared with malga podi and ghee taste wonderful and also very good to pack in kids lunchbox .I loved it with plain steamed rice or even with roti and parathas.This spicy and flavourful podi goes well with almost every thing, it is also a very good accompaniment as a dry chutney and easy to carry along for travelling and journey.

        yield - 1.5 cup

        INGREDIENTS-
        • Bengal gram /chana dal -1/2 cup
        • White lentil /urad daal -1/2 cup
        • Kashmiri red chilis/lal mirch -10
        • Sesame seeds / till - 1 tbsp
        • Whole coriander seeds/sabut dhaniya -1 tbsp
        • Salt /namak - 1 tsp
        • Asafoetida- /hing - pea size
        • Dry tamarind /Imli -1 tbsp
        • Jaggary /gur -1 tbsp
        • Cooking oil - 1 tsp
        • Whole pepper corn /sabut kali mirch - 10
        • Dried curry leaves-10
        PROCEDURE-
        1. In a pan add oil and both lentils/daal.
        2. Roast till they become red in color.
        3. Now remove the roasted daal from the pan and keep aside.
        4. Add sesame seeds, coriander seeds and peppercorns in the pan and dry roast till they give a nice aroma.
        5. Remove from the pan and keep aside
        6. Add 1 tsp of oil in the pan and add red chilies and roast for a minute on low heat.
        7. Add curry leaves and asafoetida and stir for few seconds and remove from the pan.
        8. Let  the ingredients cool down completely.
        9. Grind the roasted ingredients, jaggary, salt and tamarind  in the mixer to make a coarse powder.
        10. Store in an air tight jar.
        Serving suggestions-Mix with little ghee or sesame oil or use just as a dry powder to serve with idli,dosa or vada.

        NOTE-
        Addition of jaggary and tamarind is optional,depends on individual taste and preference, tastes great both ways.
